High in potassium, iron and taste, this salad is perfect for barbecues!
2 cups shredded jicama
1 can sweet corn
1 can black beans
1 red bell pepper, chopped
1/4 cup lime juice
1/4 cup chopped fresh cilantro
1/2 tsp onion powder
1/2 tsp cumin
1 tsp chili powder
Salt and pepper to taste
Toss together and chill for an hour. Serve cold.
*Variation: Make a meal of it by adding 1 lb chopped chicken cooked in mild taco seasoning and cooled!
