These are a favorite in my house. I freeze them in ziplock snack bags to be quickly thrown in lunches or heated for 15 seconds in the microwave for a special treat!
Heat oven to 350 F and spray cookie sheets with cooking spray. Blend the following together well in stand mixer until creamy:
4 over ripe bananas
2/3 cup honey
1/3 cup molasses
1/4 cup melted butter
1 tsp vanilla
2 large eggs
Sift together the following dry ingredients well and add to banana mixture:
3 cups white rice flour
1/2 cup tapioca flour
2 TBSP xanthan Gum
1 tsp salt
3 tsp baking soda
1 tsp cloves
1 tsp nutmeg
1 tsp cardamom
1 tsp cinnamon
Add gluten free oatmeal with wooden spoon or spatula until the mixture is thick enough to hold together when placed by heaping spoonful on the cookie sheet. Bake for 14-15 minutes. Cool and enjoy! Makes 3 dozen large cookies.
